- 1 lb. ground meat (beef or turkey)
- 1 pkg. corn tortillas (12)
- 1 (20 oz.) can enchilada sauce
- 1 can cream of mushroom soup
- 1/2 lb. Colby cheese, grated
- 1 small can sliced olives
Directions

1Preheat oven to 350° to 400°.

2Brown meat in frypan and remove. Heat 1 cup cooking oil.

3To soften tortillas, dip in hot oil and drain.

4Set aside on plate.

5In another plate, pour some enchilada sauce and dip tortillas in sauce.

6Fill each tortilla with 1 tablespoon of meat and 1 teaspoon cheese.

7Roll up and put in oblong baking dish with seams down.

8Continue until all tortillas are filled.

9Heat enchilada sauce with mushroom soup until warm. Pour over filled tortillas.

10Sprinkle cheese and sliced olives over top and bake in preheated oven until cheese melts, about 20 minutes.

11Serve with shredded lettuce and diced tomatoes.
