Ingredients
- 1 lb. hamburger
- 1 medium onion
- 2 c. Cheddar cheese
- 1 tsp. salt
- 1 tsp. pepper
- 1 (15 oz.) can tomato sauce
- 2/3 c. water
- 1 Tbsp. chili powder
- 1 tsp. cumin
- 1 1/2 tsp. garlic powder
- 1/3 c. chopped red pepper
- 8 tortillas
Directions

1Cook and stir hamburger, onion, salt and pepper until browned. Stir in 1/2 cup cheese.

2Cover and set aside.

3In separate pan, heat remaining ingredients, except tortillas.

4Bring to a boil and reduce heat.

5Simmer 15 minutes and pour sauce into pie plate. Dip each tortilla into sauce, covering both sides.

6Place into 12 x 9-inch baking dish and spoon 1/4 cup hamburger mix onto tortilla and roll around filling.

7Pour remaining sauce and cheese over enchiladas.

8Bake at 350° for about 15 to 20 minutes.
