- 2 large Cheddar cheese wedges, grated finely
- 2 onions, grated finely
- 2 cans enchilada sauce
- liquid vegetable oil
- 1 pkg. flour tortillas
Directions

1Heat oil in a large frying pan.

2Heat enchilada sauce in a separate saucepan.

3Dip the tortillas (one at a time) in the hot oil to soften; then dip them in the hot enchilada sauce.

4Fill each tortilla with the cheese and onion; then roll up.

5Place each side by side in a long baking dish.

6Place the remaining cheese, onion and sauce over the top of the rolls and bake at 400° for about 20 minutes (or until the cheese has melted).
