  • 2 large Cheddar cheese wedges, grated finely
  • 2 onions, grated finely
  • 2 cans enchilada sauce
  • liquid vegetable oil
  • 1 pkg. flour tortillas

Directions

    Heat oil in a large frying pan.

    Heat enchilada sauce in a separate saucepan.
  3. 3
    Dip the tortillas (one at a time) in the hot oil to soften; then dip them in the hot enchilada sauce.

    Fill each tortilla with the cheese and onion; then roll up.

    Place each side by side in a long baking dish.
  6. 6
    Place the remaining cheese, onion and sauce over the top of the rolls and bake at 400° for about 20 minutes (or until the cheese has melted).
