- 2 lb. grated mild Cheddar cheese
- 1 chopped onion
- 1 (10 oz.) can Wolfe chili with beans
- 2 1/4 c. water
- 16 corn tortillas
- 1/2 lb. hamburger meat
Directions

1In a medium skillet, heat oil; dip each corn tortilla one at a time.

2Let them soak on a paper towel.

3Set aside.

4Brown hamburger meat; drain.

5Combine brown meat with Wolfe chili; add water and bring to a boil.

6Simmer for 20 minutes.

7Place equal portions of grated cheese in center of tortilla.

8Roll tortilla to enclose filling.

9Place in a baking dish seam side down.

10Pour meat sauce mixture over enchiladas.

11Top with chopped onion and remaining cheese.

12Cover and bake in 350° oven for 20 minutes.
