  • 2 cups Cooked Chopped or Shredded Chicken
  • 1 cup Shredded Lettuce
  • 1 cup Chopped Tomato
  • 16 ounces Mexican Cheese
  • 1 package Flour Tortillas
  • 1 can Refried Beans
  • 2 tablespoons Butter
  • 2 tablespoons Flour
  • 1 can Beef Consomme
  • 1 can Enchilada Sauce
  • 1/2 teaspoon Chili Powder
  • 2 cloves Garlic
  • 1 pinch Salt
  • 1 pinch Pepper

Directions

    On each tortilla shell layer refried beans, a handful of cheese, lettuce, tomato, salt, pepper, then another handful of cheese, then chicken.

    Roll tortilla shells and place in a casserole dish.

    Combnine butter, flour, beef consomme, enchilada sauce, chili powder, and garlic in a saucepan and heat.

    Pour the sauce over the rolled tortillas.

    Add the rest of the cheese over the top.

    Bake at 350 degrees for 15 to 20 minutes or until bubbly.

    Optionally, serve with guacamole, salsa, sour cream, and tortilla chips.
