  • 3/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 11/16 cup sugar
  • 2 3/8 cups walnut pieces pecans or walnuts mixed nuts
  • 1 1/2 cups dried cranberries
  • 10 dried figs cut into wedges
  • 1 1/4 tablespoons dried dates chopped
  • 2 cups dried apricots cut into wedges
  • 3 large eggs
  • 1 teaspoon vanilla extract

    Preheat oven to 150 degrees Celsius.

    In a bowl combine the flour, baking soda, baking powder and salt.

    Add the sugar, nuts and dried fruits.

    Mix well to coat fruit and nuts with sugar / flour.

    In a bowl beat the eggs, and add vanilla.

    Add the egg mixture to the dry ingredients and mix well.

    Pour into a greased cake pan and bake for 60-75 minutes.

    Let it cool on a rack and slice finely.
