- 3/4 cup flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/2 teaspoon salt
- 11/16 cup sugar
- 2 3/8 cups walnut pieces pecans or walnuts mixed nuts
- 1 1/2 cups dried cranberries
- 10 dried figs cut into wedges
- 1 1/4 tablespoons dried dates chopped
- 2 cups dried apricots cut into wedges
- 3 large eggs
- 1 teaspoon vanilla extract
Directions

1Preheat oven to 150 degrees Celsius.

2In a bowl combine the flour, baking soda, baking powder and salt.

3Add the sugar, nuts and dried fruits.

4Mix well to coat fruit and nuts with sugar / flour.

5In a bowl beat the eggs, and add vanilla.

6Add the egg mixture to the dry ingredients and mix well.

7Pour into a greased cake pan and bake for 60-75 minutes.

8Let it cool on a rack and slice finely.
