  • 6 oz. raisins
  • 4 oz. sultanas or golden raisins
  • 2 oz. currants
  • 6 oz. soft brown sugar
  • 1/2 pt. strained cold black tea
  • 1 egg, beaten
  • 8 oz. plain whole meal flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. ground mixed spice

    Put the dried fruit and sugar in a bowl.

    Pour the tea over; soak overnight.

    Grease and base-line a 2-pint loaf tin.

    The next day, add the egg, flour, baking powder and mixed spice to the fruit and tea mixture.

    Beat thoroughly with a wooden spoon until all ingredients are evenly combined.

    Spoon into the prepared tin; level the surface.

    Bake at 350° for about 1 1/4 hours, or until well risen and a skewer inserted in the center comes out clean. Turn out onto a wire rack to cool.
