Ingredients

  • Chiles cut into strips
  • Red Onions cut into rings
  • Carrots cut into strips
  • Distilled White Vinegar
  • Bay leaves
  • Mexican oregano
  • marjoram (plenty of it)
  • garlic cloves

Directions

    A. Spice Tea (to skip this step use a spice bag)

    1) 1 inch of vinegar or so in pot to boil
  3. 3
    2) Add seasoning mix, boil spices in vinegar for a minute or two (you should notice some color in the vinegar)

    3) Strain seasoning mix from vinegar and discard seasoning mix

    B. Simmering

    1) Add all the veggies in the pot and add more vinegar until it covers veggies
  7. 7
    2) Bring to a boil, lower heat, cover & simmer for 30 minutes
  8. 8
    3) You may need to add vinegar at this point if it does not cover veggies
