  • 2 Tbsp. butter or margarine
  • 1 small onion, minced
  • 2 Tbsp. flour
  • 3/4 tsp. salt
  • dash of pepper
  • 1 c. milk
  • 2 eggs, slightly beaten
  • 1 can cream-style corn
  • 1 1/4 c. cracker crumbs
  • 2 Tbsp. additional butter or margarine

Directions

    Melt 2 tablespoons butter.

    Add onion; cook until tender.

    Add flour, salt and pepper.

    Gradually add milk.

    Cook and stir until mixture thickens.

    Add corn, eggs and 1 cup of the cracker crumbs. Place in oiled baking dish.

    Sprinkle with remaining crumbs; dot with additional 2 tablespoons butter.

    Bake at 350° for 35 minutes, until center is firm and top is browned.
