Escalloped Eggplant

Ingredients

  • 2 medium eggplants
  • 1 c. thick white sauce
  • 1 jar pimento cheese
  • 1/2 tsp. mustard
  • 1/4 tsp. pepper and paprika
  • buttered bread crumbs
  • 1 lb. ground meat
  • 1 large onion
  • 1/2 green pepper
  • 3 cooked or canned tomatoes

Directions

    Peel eggplant, cut into 2-inch cubes.

    Boil in salted water 15 minutes or until tender.

    Drain well.

    Add cheese, mustard, pepper and paprika to white sauce.

    Cook over hot water until cheese melts.

    In small amount of shortening, fry ground meat until brown.

    Add onion and green pepper, cooking until tender.

    Add salt and pepper to taste.
