- 2 medium eggplants
- 1 c. thick white sauce
- 1 jar pimento cheese
- 1/2 tsp. mustard
- 1/4 tsp. pepper and paprika
- buttered bread crumbs
- 1 lb. ground meat
- 1 large onion
- 1/2 green pepper
- 3 cooked or canned tomatoes
Directions

1Peel eggplant, cut into 2-inch cubes.

2Boil in salted water 15 minutes or until tender.

3Drain well.

4Add cheese, mustard, pepper and paprika to white sauce.

5Cook over hot water until cheese melts.

6In small amount of shortening, fry ground meat until brown.

7Add onion and green pepper, cooking until tender.

8Add salt and pepper to taste.
