Eti's Cheesecake (Practically No-Bake)

Ingredients

  • 150 g butter
  • 4 tablespoons sugar
  • 2 egg yolks
  • 1 12 cups self-raising flour
  • 1 (3 1/2 ounce) box instant vanilla pudding (the 4-serving size)
  • 1 cup milk
  • 1 cup whipping cream
  • 500 g cream cheese (Eti uses 5% fat)
  • 12 cup sugar

Directions

    To make the crust:.

    Knead all the crust ingredients together.

    Use enough to cover the bottom of a 26 cm springform pan.

    Put the rest in another pan.

    Bake both in a 180 degree C oven for about 15 minutes until nicely browned.

    Remove from oven to cool.

    To make the cheesecake bit:.

    Beat all the ingredients together.

    Pour over the crust in the springform pan.

    Crumble the reserved crust over the top of the cheesecake to produce a crumb topping.

    Place in the refrigerator for at least 4 hours, preferably overnight.
