- 150 g butter
- 4 tablespoons sugar
- 2 egg yolks
- 1 12 cups self-raising flour
- 1 (3 1/2 ounce) box instant vanilla pudding (the 4-serving size)
- 1 cup milk
- 1 cup whipping cream
- 500 g cream cheese (Eti uses 5% fat)
- 12 cup sugar
Directions

1To make the crust:.

2Knead all the crust ingredients together.

3Use enough to cover the bottom of a 26 cm springform pan.

4Put the rest in another pan.

5Bake both in a 180 degree C oven for about 15 minutes until nicely browned.

6Remove from oven to cool.

7To make the cheesecake bit:.

8Beat all the ingredients together.

9Pour over the crust in the springform pan.

10Crumble the reserved crust over the top of the cheesecake to produce a crumb topping.

11Place in the refrigerator for at least 4 hours, preferably overnight.
