- 2 cloves garlic, minced
- 2 Tbsp. oil
- 1 large onion, chopped
- 1 (2 1/2 to 3 lb.) beef chuck roast, cut into 1/2-inch cubes
- 1 (8 oz.) can whole kernel corn
- 1 1/2 lb. chopped tomatoes
- 1/2 c. low sodium soy sauce
- 1 Tbsp. chili powder
- 1 tsp. crumbled oregano
- 1 (4 oz.) can diced green chilies
Directions

1Saute onion and garlic in oil in Dutch oven.

2Brown beef cubes. Add corn juice, tomatoes, soy sauce, chili powder and oregano. Cover and simmer 1 1/4 hours.

3Uncover and simmer 45 minutes until meat is tender.

4Stir in corn and green chiles and cook until heated.

5Serves 6 to 8.
