Ingredients

  • 2 cloves garlic, minced
  • 2 Tbsp. oil
  • 1 large onion, chopped
  • 1 (2 1/2 to 3 lb.) beef chuck roast, cut into 1/2-inch cubes
  • 1 (8 oz.) can whole kernel corn
  • 1 1/2 lb. chopped tomatoes
  • 1/2 c. low sodium soy sauce
  • 1 Tbsp. chili powder
  • 1 tsp. crumbled oregano
  • 1 (4 oz.) can diced green chilies

Directions

    Saute onion and garlic in oil in Dutch oven.

    Brown beef cubes. Add corn juice, tomatoes, soy sauce, chili powder and oregano. Cover and simmer 1 1/4 hours.

    Uncover and simmer 45 minutes until meat is tender.

    Stir in corn and green chiles and cook until heated.

    Serves 6 to 8.
