Fall Sausage Stew

- 3 Tbsp. olive oil
- 1 large onion, cut up
- 1 large zucchini, sliced
- 1 medium green cabbage, cut up
- 1 can kidney beans, rinsed
- 5 medium tomatoes, cut up
- 2 bay leaves
- 1 red bell pepper, sliced
- dill to taste
- caraway seed to taste
- salt to taste
- water as needed
- 8 oz. can tomato sauce
- 1 1/2 to 2 lb. precooked Polish sausage, cut in bite size chunks
Directions

1Heat olive oil.

2Saute onion, zucchini, cabbage, red bell pepper and tomatoes in olive oil.

3Add bay leaves, kidney beans, dill, caraway seed, Polish sausage and tomato sauce.

4Add water (about 1 cup).

5Reduce heat to simmer after stew comes to a boil. Cook on very low heat for 1/2 hour or 45 minutes.
