- 6 slices bacon, cut into 2-inch pieces
- 2 Tbsp. chopped onion
- 1/2 c. shredded Cheddar cheese
- 6 eggs
- 1 small chopped green pepper
- 3 medium potatoes, cooked, peeled and cubed
- salt and pepper to taste
Directions

1Fry bacon and set aside.

2Add to 3 tablespoons bacon grease the pepper, onions and potatoes.

3Cook 5 minutes.

4Sprinkle cheese on top and melt.

5Add the bacon pieces.

6Break eggs into skillet and cook, stirring sparingly.

7Season with salt and pepper to taste.
