- 2 large eggs
- 4 tablespoons butter melted
- 17 ounces corn muffin mix
- 11 ounces corn Southwestern style, drained
- 1/3 cup red pepper diced

1Preheat oven to 350°F. Lightly grease a 9 inch square cake pan.

2Whisk together buttermilk, eggs and butter. Stir in corn muffin mix, corn and pepper. Transfer to prepared pan and bake for 30 mins, or until a skewer inserted in the center comes out clean.
