  • 1 c. raisins
  • 1 (8 oz.) box dates
  • 1 lb. candied pineapple
  • 1 1/2 ??? candied cherries
  • 8 oz. mixed fruit (optional)
  • 4 c. nuts
  • 3/4 to 1 c. flour
  • 5 eggs
  • 1 c. brown sugar
  • 1 c. white sugar (granulated)
  • 1 c. Wesson oil
  • 2 c. flour (self-rising recommended)
  • 2 tsp. allspice
  • 2 tsp. cinnamon
  • 1 tsp. cloves

    Combine first 7 ingredients in large bowl.

    Mix eggs, sugars and oil in large bowl.

    Sift together dry ingredients in small bowl.

    To oil, sugar and egg mixture, add flour mixture alternately with 1 (6-ounce) can of pineapple juice.

    Pour batter over floured fruit and nut mix, taking care to mix well.

    Pour into 10-inch tube pan.

    Bake in slow oven at 300° for 3 hours.

    Let stand in pan 15 minutes.

    Turn out onto cake rack.

    When cake is cold, wrap in foil and store in covered container.
