  • 2 Tbsp. oil
  • 1/2 c. chopped onion
  • 2 Tbsp. minced garlic
  • 12 black olives
  • 1/4 c. chopped peppers
  • 1 c. canned corn
  • 3/4 c. water or liquid from corn
  • 1 c. garbanzo beans with liquid
  • 1/4 tsp. basil and oregano
  • 1 3/4 c. tomatoes
  • 1/2 c. grated cheese
  • 1 c. cornmeal

    Saute onion, garlic and peppers.

    Add water and bring to a boil, then add cornmeal and beans with liquid.

    Mix in the remaining ingredients.
