- 1 (16 oz.) can pumpkin
- 1 c. low-fat (2%) canned milk
- 1/3 c. Bisquick mix (low-fat)
- 3 eggs (leave yolk out of 2)
- 3 Tbsp. low-fat margarine
- 2/3 c. brown sugar (light or dark)
- pumpkin pie spice or cinnamon and nutmeg (2 tsp.)
Directions

1Preheat oven to 350°.

2Mix all ingredients very smoothly.

3Pour in an 8 or 9-inch pie or cake pan, sprayed with Pam.

4Bake for 50 minutes.

5Let cool.

6Low-fat Cool Whip is good with this.

7Shake a little bit of nutmeg on top of the Cool Whip.
