  • 2# fava beans (1 cup shelled beans)
  • 1# sugar snap peas
  • 1/2 red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 new potatoes, peeled and sliced very thin
  • 1 Tbsp fresh tarragon leaves
  • 1 Tbsp fresh marjoram

Directions

    Combine favas, sugar snaps, onions, olive oil and 1/4 cup hot water. Cook over med-high heat, stirring often until beans and peas are bright green and still crisp, 5-7 min. season with salt and pepper.

    Add potatoes and cook 5 min. Remove from heat and add herbs. Stir to mix and serve.
