- 1 large can green chili peppers, split and seeded
- 1 lb. mild Cheddar cheese, grated
- 1 lb. Monterey Jack cheese, grated
- 5 eggs, beaten (6 if desired)
- 1 can evaporated milk
- 3 cans mild chili salsa
Directions

1Place half the chili peppers in a 9 x 13-inch casserole dish. Top with cheeses and remaining peppers.

2Blend eggs with evaporated milk in a bowl; pour over layers.

3Bake in a 350° oven for 50 to 60 minutes, or until lightly browned.

4Serve with salsa.
