  • 1 large can green chili peppers, split and seeded
  • 1 lb. mild Cheddar cheese, grated
  • 1 lb. Monterey Jack cheese, grated
  • 5 eggs, beaten (6 if desired)
  • 1 can evaporated milk
  • 3 cans mild chili salsa

Directions

    Place half the chili peppers in a 9 x 13-inch casserole dish. Top with cheeses and remaining peppers.

    Blend eggs with evaporated milk in a bowl; pour over layers.

    Bake in a 350° oven for 50 to 60 minutes, or until lightly browned.
