- 6 c. canned plum tomatoes
- 1 onion, chopped
- 1/2 c. green pepper, chopped
- 1/2 c. cucumber, chopped
- 2 c. tomato juice
- 1/2 tsp. cumin
- 1 garlic clove, minced
- 1 Tbsp. salt
- freshly ground pepper
- 1/4 c. olive ol
- 1/4 c. wine vinegar
- 1 c. finely chopped tomato-garlic croutons
Directions

1In a blender, puree tomatoes, onion, green pepper and cucumber.

2Add tomato juice, cumin, garlic, salt and pepper.

3Put in a bowl; cover and chill.

4Before serving, add oil and vinegar. Serve accompanied by side dishes of chopped vegetables.

5Garnish with croutons.
