Ingredients

  • 12 ounces whole wheat penne rigate
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons olive oil
  • 15 ounces red kidney beans, rinsed and drained
  • 1 teaspoon dried basil
  • 1 teaspoon dried chives
  • 1 teaspoon salt
  • 14 teaspoon pepper
  • 14 cup parmesan cheese, grated
  • 1 12 cups fresh spinach, torn (3oz)

Directions

    Prepare pasta according to package directions.

    Drain and set aside.

    In a large skillet, saute the bell peppers and garlic in the olive oil.

    Stir in beans and cooked pasta.

    Add basil, chives, salt and pepper; mix well.

    Remove from heat and stir in the cheese.

    Add spinach and toss to coat.
