  • 1 Tbsp. unsalted butter
  • 4 large shallots, minced or 4 scallions
  • 6 strips bacon, sliced crosswise into julienne strips
  • 1 lb. fettucine noodles
  • 1/4 c. heavy cream
  • 1/2 tsp. salt
  • 1 tsp. olive oil
  • 3 egg yolks, room temperature
  • 1/2 c. fresh grated Parmesan cheese
  • 1/2 tsp. white pepper
  • fresh grated Parmesan cheese (garnish)
  • fresh grated white pepper (garnish)

Directions

    In saucepan, heat butter and oil together.

    Saute shallots over medium heat until soft, about 5 minutes.

    Add bacon and continue to cook over medium heat for an additional 10 minutes or until bacon begins to brown; set aside.
