- 4 large shallots, minced or 4 scallions
- 6 strips bacon, sliced crosswise into julienne strips
- 1 lb. fettucine noodles
- 1/4 c. heavy cream
- 1/2 tsp. salt
- 1 tsp. olive oil
- 3 egg yolks, room temperature
- 1/2 c. fresh grated Parmesan cheese
- 1/2 tsp. white pepper
- fresh grated Parmesan cheese (garnish)
- fresh grated white pepper (garnish)
Directions

1In saucepan, heat butter and oil together.

2Saute shallots over medium heat until soft, about 5 minutes.

3Add bacon and continue to cook over medium heat for an additional 10 minutes or until bacon begins to brown; set aside.
