Ingredients

  • 2 lb. pink beans
  • 1 to 1 1/2 lb. salt pork
  • 3 to 4 garlic cloves
  • 3 to 4 medium onions, slivered
  • 2 Tbsp. vegetable oil
  • 1 large plus 1 small can tomatoes
  • 4 Tbsp. sugar
  • 2 Tbsp. chili powder
  • 4 Tbsp. vinegar
  • 2 Tbsp. Worcestershire sauce
  • 1 or more tsp. crushed red chilies
  • 1/4 lb. Cheddar cheese, grated

Directions

    Pick over and rinse beans.

    Place in large pot and cover with water so that water is about 2 inches over top of beans.

    Mince garlic; cut salt pork into 1/4 x 1/4 x 1-inch pieces and add both to beans.

    Bring to boil and simmer until tender (2 to 4 hours).
