Fiesta Pork Bake

Ingredients

  • 6 boneless pork chops
  • 2 Tbsp. margarine
  • salt and pepper to taste
  • 1 (1 3/8 oz.) pkg. dry onion soup
  • 1 large green pepper, chopped
  • 1 c. uncooked rice
  • 1/2 c. catsup
  • 1 tsp. Worcestershire sauce
  • 2 c. boiling water
  • 1 c. (1/4 lb.) shredded Cheddar cheese

Directions

    Coat a shallow 2-quart casserole with melted margarine. Sprinkle chops with salt and pepper; arrange in casserole.

    Top with soup mix, green pepper and rice.

    Combine catsup and Worcestershire sauce; spread over rice.

    Gently pour in boiling water.

    Cover and bake at 350° for 55 or 60 minutes, until done. (Additional 1/2 cup of water may be added if casserole becomes too dry.)

    Remove from oven; top with cheese.

    Cover and allow to stand 10 minutes.
