  • 1 small shallot, finely diced
  • 1 tablespoon red wine vinegar
  • 1 tablespoon balsamic vinegar
  • Salt and pepper
  • 1 teaspoon Dijon mustard
  • 4 ripe figs, peeled and mashed
  • 3 tablespoons olive oil
