- 2 c. sifted self-rising flour
- 2 tsp. cinnamon
- 2 c. sugar
- 1 1/2 c. vegetable oil
- 4 eggs
- 2 c. finely grated raw carrots
- 1 c. crushed pineapple, undrained
- 1 c. chopped nuts
- 1 tsp. vanilla
Directions

1Preheat oven to 325°.

2Grease and flour a 15 x 10 x 2-inch pan. Set aside. Combine flour and cinnamon in a bowl. Set aside. Combine sugar, oil and egg in a large bowl.

3Add vanilla. Beat with electric mixer until well blended.

4Gradually beat in flour mixture; blend well.

5Stir in carrots, pineapple and nuts.

6Pour in pan. Bake 55 to 60 minutes.
