Ingredients
- 6 small eggplants
- 1/2 lb. hamburger
- 2 onions, finely chopped
- 2 to 3 tomatoes, chopped
- 2 to 3 chili peppers, finely chopped
- 1/2 bunch parsley
- 3/4 Tbsp. margarine
- salt and black pepper
Directions

1Cut off the stems and peel the eggplants in strips.

2Soak in salt water for 1/2 hour.

3Pat dry with paper towel.

4Fry both sides in oil; remove.

5Brown the hamburger, onions and peppers in a frying pan, then add the tomatoes and parsley.

6Stir and season with salt and pepper to taste.

7Cut slits in the sides of the eggplants.

8Fill with the hamburger mixture.

9Place the stuffed eggplants in a baking pan with 1/4 cup water.

10Bake for 45 minutes at 350°.
