- 4 veal steaks
- Salt
- Pepper
- 3 tbsp. butter
- 4 slices white bread
- 4 slices boiled ham
- 2 tbsp. Armanac
- 2 tbsp. Madeira
- 5 oz. fresh mushrooms
- 4 tbsp. sweet cream
- Lemon slices
- Parsley
Directions

1Wash and dry meat.

2Heat the butter and fry the veal on both sides shortly.

3Add salt and pepper; fry each side on medium heat about 5 minutes more.

4Remove and keep warm.

5Put the bread in the butter and fry on both sides until golden brown.

6If necessary add a little more butter.

7Take bread out and dry on paper towel and keep warm.

8Heat the ham until good and warm in the butter; remove and cut to fit the bread.

9Put the bread on a prewarmed plate; put ham and veal on top and keep warm.

10Clean and slice mushrooms, add with the Armanac and Madeira to butter and saute.

11Add the cream and pour the sauce over the veal steaks.

12Garnish with lemon slices and parsley and serve at once.
