  • 1 1/2 lbs chicken breasts, diced
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons canola oil
  • 1 garlic clove, minced
  • 1 cup carrot, sliced into rounds
  • 1 cup snow peas, trimmed
  • 1 red pepper, cut into thin strips
  • 1/3 cup soy sauce
  • 3 tablespoons chili-garlic sauce
  • 1 tablespoon orange marmalade
  • 1 tablespoon sesame oil
  • 1 tablespoon sesame seeds (optional)
  • 1/4 cup diced green onion
  • 2 cups cooked long-grain rice

    Heat canola oil in a large skillet over medium high heat.

    In a small bowl, whisk together soy sauce, chili garlic sauce, sesame oil, and orange marmalade; set aside.

    Season chicken with salt and pepper. Add chicken to the skillet and saute until golden brown, about 5 - 7 minutes. Remove chicken from the skillet.

    Add carrots, snow peas and red pepper to the skillet; saute for about 5 minutes or until vegetables are crisp tender. Add chicken back to.
