- 1 clove garlic
- 1 Tbsp. margarine or butter
- 1 (10 oz.) pkg. frozen leaf spinach, thawed and liquid pressed out
- 1 lb. haddock fillets
- salt and pepper
- 2 tsp. lemon juice
- 1 small onion, thinly sliced
- 1 (10 3/4 oz.) can condensed Cheddar cheese soup
- 1 large tomato, sliced
- dried oregano leaves to taste
Directions

1If desired, rub a shallow 2-quart baking dish with garlic. Spread dish with margarine, then spinach.

2Add the fish fillets and season lightly with salt, pepper and lemon juice.

3Add onion rings and spread soup on top.

4Arrange tomato slices on soup and sprinkle with oregano.

5Bake in a 350° oven about 35 minutes. Makes 4 servings.
