Fish Casserole

  • 1 clove garlic
  • 1 Tbsp. margarine or butter
  • 1 (10 oz.) pkg. frozen leaf spinach, thawed and liquid pressed out
  • 1 lb. haddock fillets
  • salt and pepper
  • 2 tsp. lemon juice
  • 1 small onion, thinly sliced
  • 1 (10 3/4 oz.) can condensed Cheddar cheese soup
  • 1 large tomato, sliced
  • dried oregano leaves to taste

Directions

    If desired, rub a shallow 2-quart baking dish with garlic. Spread dish with margarine, then spinach.

    Add the fish fillets and season lightly with salt, pepper and lemon juice.

    Add onion rings and spread soup on top.

    Arrange tomato slices on soup and sprinkle with oregano.

    Bake in a 350° oven about 35 minutes. Makes 4 servings.
