- 1/4 c. butter
- 1 c. thinly sliced onion
- 1 c. cubed raw potatoes
- 1 c. sliced raw carrots
- 1 c. water
- 2 tsp. salt, divided
- 1/8 tsp. pepper
- 1 (1 lb.) pkg. frozen haddock, defrosted and cut into 1-inch cubes
- 3 c. milk
- 1/2 tsp. leaf rosemary
- 1/4 tsp. leaf thyme
- 1 c. half and half
- 2 Tbsp. all-purpose flour
Directions

1Melt butter; add onion, potato, carrot, water, 1 teaspoon salt and pepper.

2Cover and simmer until carrot is almost tender, about 15 minutes.

3Add fish, milk, herbs and remaining 1 teaspoon salt. Heat to simmering.

4Cook until fish flakes easily.
