Fish Chowder

Ingredients

  • 1 c. chopped celery
  • 1 c. finely cut carrots
  • 1 large onion, chopped
  • 2 large potatoes, cubed
  • 2 c. fish, cubed (uncooked)
  • 1 large can cream-style corn
  • 1 large and 1 small can evaporated milk
  • 2 tsp. salt
  • 1/2 tsp. basil
  • 1/4 tsp. pepper
  • 2 c. water
  • 1 1/2 sticks butter

Directions

    Saute celery, carrots and onion in butter until onion is opaque in a large pot.

    Add potatoes, water, salt, pepper and basil.

    Simmer 15 minutes.

    Place fish on top of potatoes.

    Cover; simmer 15 minutes.

    Stir in corn and milk, then heat just to boiling.

    Serve with crackers.

    Do not boil.
