  • 6 medium potatoes
  • 1/4 c. butter
  • 1 tsp. salt
  • 2 Tbsp. butter
  • 2 c. shredded Cheddar cheese
  • 1 1/2 c. sour cream
  • 1/4 tsp. paprika
  • 1/3 finely chopped green onion

Directions

    Cook potatoes in skins; cool, peel and shred or mash coarsely. Over low heat, combine cheese and 1/4 cup butter, stirring until almost melted.

    Remove from heat and blend in sour cream, onion and seasoning.

    Fold in potatoes.
