- 1/4 lb. salt pork
- 1 onion, diced
- 3 c. potatoes, diced
- 2 lb. fish fillets (red snapper or cod)
- 1 (1 lb.) can creamed corn
- 2 oz. butter
- 1 pt. half and half
- parsley
- 1/4 tsp. thyme
Directions

1Use 6-quart pan.

2Cut pork into 1/4-inch cubes.

3Brown in pan. Add onion, potatoes and water to cover potatoes.

4When potatoes come to a boil, add fish (salt and peppered).

5Cook 2 to 3 minutes on low heat.

6Turn fish and cook 3 more minutes.

7Remove fish and flake.

8Add corn, half and half, butter, flaked fish, parsley and thyme.

9Simmer slowly and bring almost to boil.

10Do not stir too much.
