- 4 large potatoes
- 2 slices salt pork
- 1 small onion
- 1 1/2 lb. haddock
- 1 can evaporated milk
Directions

1Peel and cube the potatoes.

2Cook potatoes in a pan with just enough water to cover them.

3Cook until tender.

4Brown salt pork pieces in frypan.

5Add to the potatoes.

6Fry cut-up onion in fat from salt pork.

7Add to the potatoes.

8Put pieces of fish on top of the cooked potatoes.

9Cook for about 3 to 4 minutes longer. Add the can of evaporated milk.

10Stir and cook until just hot. Salt and pepper, if desired.

11Serves 6 persons.
