  • 1 lb. white fish (cod, haddock, etc.)
  • 3 eggs, separated
  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. minced garlic
  • 1 Tbsp. minced parsley

    Cook fish.

    Remove all skin and bones.

    Mash fine.

    Beat egg yolks until light and thick.

    Add flour.

    Add salt, pepper, garlic, parsley and fish.

    Beat egg whites and fold into fish mixture.

    Drop by tablespoons into hot oil (360° to 370°).
