- 3 eggs, separated
- 3 Tbsp. flour
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. minced garlic
- 1 Tbsp. minced parsley
Directions

1Cook fish.

2Remove all skin and bones.

3Mash fine.

4Beat egg yolks until light and thick.

5Add flour.

6Add salt, pepper, garlic, parsley and fish.

7Beat egg whites and fold into fish mixture.

8Drop by tablespoons into hot oil (360° to 370°).

9Cook until golden brown.
