- 4 fish fillets
- 1 small onion
- 2 tablespoons lemon juice
- 1/2 cup oil
- salt
- pepper
- flour
- 2 eggs
- 1 tablespoon milk
- packaged dry breadcrumbs
- 1 tablespoon oil, extra
- 60 g butter

Directions

1Remove skin from fillets.

3Combine peeled and finely chopped onion, lemon juice, oil, salt and pepper in a large plate, mix well.

4Add fillets, spoon mixture over fillets to coat thoroughly.

5Allow fillets to marinate 1 hour, turning them occasionally.

6Remove fillets from marinate.

7Coat lightly with flour.

8Dip in combined beaten eggs and milk, then into breadcrumbs, pressing crumbs on firmly.

9Heat extra oil and butter in large frying pan.

10Add fillets, cook gently on both sides until golden brown.

11Allow approximately 3 minutes on each side.

12Drain.

13Melt extra butter in separate pan, add crushed garlic.

14Cook until butter turns light golden brown, add parsley.

15Pour browned butter over fillets.
