- 4 potatoes
- 2 tablespoons butter
- 3 tablespoons flour
- 350 ml milk
- 3 hard-boiled eggs
- 450 g canned smoked fish fillet
- 3 tablespoons chopped fresh parsley (optional)
Directions

1Peel and boil the potatoes.

2When cooked, mash with 1 tbsp butter and 50 mls milk.

3Season to taste.

4Meanwhile, melt 1 tbsp butter in a saucepan over medium heat.

5Whisk in the flour.

6Cook for about 1 minute, until golden.

7Slowly add the milk to the roux (the flour and butter), whisking it smooth as you go.

8Cook sauce until thick, stirring very frequently.

9Smooth out any lumps as they form, with the whisk or the back of a spoon.

10Mix smoked fish into the white sauce.

11Quarter the boiled eggs and mix them inches If you are using parsley, chop finely and mix it inches.

12Pour the fish mixture into a casserole dish, top with the mashed potato.

13Bake at 180 degrees celcius for 25 minutes or until mashed potato is golden brown.
