Ingredients

  • 3 lb. red snapper or other favorite fish
  • 3 eggs, beaten
  • 1 c. milk
  • 1 stick butter, melted
  • 1 c. cracker crumbs
  • 1 Tbsp. parsley, chopped
  • 1 Tbsp. onion, grated
  • juice of 1 lemon
  • salt and pepper to taste
  • sherry to taste

Directions

    Bake fish with a little seasoning; bone and flake.

    Place in a bowl and add eggs, mixing well.

    Add milk and half of butter, half of crumbs, parsley, onion, lemon juice, salt, pepper and sherry. Mix, then place in buttered baking dish.

    Top with remaining crumbs and butter.

    If dry, add milk.

    Place baking dish in pan of hot water and bake at 325° for about 50 minutes.

    Serve with tartar sauce or other favorite.

    Yields 8 to 10 servings.
