Ingredients

  • 2 c. cold cooked fish flakes (can use canned mackerel or salmon)
  • 2 Tbsp. grated carrot
  • 2 Tbsp. grated onion
  • 1 Tbsp. grated green pepper
  • 1/2 tsp. black pepper
  • 1/3 tsp. salt
  • 4 eggs
  • 2 c. lightly seasoned mashed potatoes

Directions

    Mix fish flakes, carrot, onion and green pepper (seasoned). Separate eggs.

    Beat the whites until stiff and set aside.

    Beat egg yolks until light yellow.
  4. 4
    Add the yolks to fish flake mixture, then add the mashed potatoes.

    Lastly fold in the egg whites.

    Put in a greased baking dish.

    Set dish in a pan with warm water and place on center rack of oven at 360° for 30 minutes.
