- 4 eggs
- 5 filets hake
- 3 1/2 tablespoons butter
- 6 3/8 tablespoons all purpose flour
- 1 cup milk
- pepper
- nutmeg
- salt
- 2 tablespoons parsley
Directions

1Bake the hake remove bones and skin and flake meat with a fork.

2Melt the butter in a pan. Slowly add the flour and milk, stirring well until smooth. Add the egg yolks and whisk to combine. Remove from heat.

3Add the fish to the sauce and season to taste with salt, ground pepper and ground nutmeg.

4Whisk the egg whites and fold into fish mixture. Grease a baking dish with butter and line the bottom with parchment paper. Pour souffle into prepared dish. Bake for 30 minutes in a 350*F oven, until browned and bubbling.
