- 1 c. 5-grain cereal
- 1 1/2 c. nonfat buttermilk
- 1 egg, beaten
- 2 Tbsp. brown sugar
- 2 Tbsp. plus 1 1/2 tsp. vegetable oil
- 2 c. unbleached flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. ground cinnamon
- 1/4 tsp. salt
Directions

1Stir together cereal and buttermilk and let stand 5 minutes. Add egg, sugar and vegetable oil, mixing well.

2Combine the rest of the ingredients in a large bowl, stirring well.

3Add to cereal mixture and stir until dry ingredients are moistened.

4Spoon batter into an 8 1/2 x 4 1/2 x 3-inch loaf pan that has been sprayed with vegetable cooking spray.

5Bake at 350° for 45 to 50 minutes; a wooden pick inserted in center should come out clean.

6Cool 10 minutes in pan before removing.

7Yields 15 servings.
