Ingredients

  • 1 c. 5-grain cereal
  • 1 1/2 c. nonfat buttermilk
  • 1 egg, beaten
  • 2 Tbsp. brown sugar
  • 2 Tbsp. plus 1 1/2 tsp. vegetable oil
  • 2 c. unbleached flour
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. salt

Directions

    Stir together cereal and buttermilk and let stand 5 minutes. Add egg, sugar and vegetable oil, mixing well.

    Combine the rest of the ingredients in a large bowl, stirring well.

    Add to cereal mixture and stir until dry ingredients are moistened.

    Spoon batter into an 8 1/2 x 4 1/2 x 3-inch loaf pan that has been sprayed with vegetable cooking spray.

    Bake at 350° for 45 to 50 minutes; a wooden pick inserted in center should come out clean.

    Cool 10 minutes in pan before removing.
