  • 1 lb chicken breasts
  • 1 T cajun blackening rub
  • 1 T canola oil
  • 16 oz ball pizza dough
  • 1 cup cajun hummus (see recipe):
  • 8 oz poblano salsa (see recipe)
  • 2 oz feta cheese, crumbled

Directions

    preheat oven to 475F. Rub chicken with blackening rub. In a saute pan over med high heat, warm oil. Add chicken and sear each side for 4 min. Place in oven, and roast 5 min. Let cool, then slice. Make flatbreakds. Spread 2 oz of hummus on each round and top with 1 oz of salsa. top with 2 oz of chix and 1 T of feta. Place in center of hot oven and bake 5 to 8 min. serve hot.
