- 1 1/4 cups unbleached flour
- 3 cups ground flax seed
- 1 tablespoon baking powder
- 1 cup light molasses
- 3/4 cup soy milk
- 2 tablespoons olive oil
- 1/2 cup egg substitute or 1 egg
- raisins
- dried fruits
Directions

1Preheat oven to 350 degrees F. Mix all ingredients together in a large bowl. If batter seems dry add a little more soy milk.

2Coat a muffin tin with vegetable spray. Fill each cup 3/4 full and bake for about 18 minutes, or until a toothpick inserted in the center of one comes out clean.
