Flora's Grilled Leeks

Ingredients

  • 3 Leeks
  • 2 tbsp Bacon grease
  • 2 tbsp Apple Cider Vinegar
  • 1/2 a Red Pepper
  • 5 Strips of bacon
  • 1 smoked paprika-to taste
  • 1 salt-to taste
  • 1 pepper-to taste
  • 1 Goat cheese

    Fry your bacon until crispy and crumble.

    Set aside.

    slice your pepper into strips and sautee in a little butter
  4. 4
    Chop off the dark green part of your leek.
  5. 5
    Then slice the leek almost in half ( down to almost the end of the bulb) Put leeks under running water, peeling back the layers to get rid of any dirt or sand.

    Cut off the end hairs and finish cutting the leeks into.

    Cut side up drizzle some bacon grease on them and add salt, pepper, and smoked paprika according to your tastes.

    grill cut side down on the grill for approx 6 min or until you achieve grill marks.

    Then take the leeks off the grill and baste the vinegar on the cut side and form them back together into a whole.

    And roll each whole leek in aluminum foil.

    Grill on indirect heat for 10min longer.

    Take the leek off the grill and top with goat cheese, the crumbled bacon, and the red pepper.
