- 5 eggs
- 1/4 c. milk (half and half)
- 6 oz. mixed shredded Colby and Monterey Jack cheese
- 1/2 c. well drained (1/2) frozen spinach
- 1 c. chopped onion
- salt and pepper to taste
- 9-inch deep dish pie shell
Directions

1Saute onion until soft in 1/2 stick butter or oleo.

2Beat eggs with salt and pepper.

3Add milk, shredded cheese, spinach and cooled sauteed onion.

4Mix well and pour into unbaked pie shell. Bake at 375° until crust is brown and quiche is set well in the center.

5Let stand at least 10 minutes before serving.

6Good with picante.
