  • 5 eggs
  • 1/4 c. milk (half and half)
  • 6 oz. mixed shredded Colby and Monterey Jack cheese
  • 1/2 c. well drained (1/2) frozen spinach
  • 1 c. chopped onion
  • salt and pepper to taste
  • 9-inch deep dish pie shell

Directions

    Saute onion until soft in 1/2 stick butter or oleo.

    Beat eggs with salt and pepper.

    Add milk, shredded cheese, spinach and cooled sauteed onion.

    Mix well and pour into unbaked pie shell. Bake at 375° until crust is brown and quiche is set well in the center.

    Let stand at least 10 minutes before serving.

    Good with picante.
