Florentine Stuffed Shells

Ingredients

  • 1 (15 oz.) low-fat Ricotta cheese
  • 12 oz. low-fat cottage cheese
  • 1 box frozen chopped spinach, thawed and drained
  • 1/2 c. Parmesan cheese
  • 2 eggs
  • 12 to 15 cooked large shells
  • 1 large jar Ragu spaghetti sauce
  • 4 oz. Mozzarella (sprinkle on top)

Directions

    Mix Ricotta cheese, cottage cheese, spinach, Parmesan cheese and eggs and stuff into cooked shells.

    Pour 1/2 jar of sauce into bottom of casserole dish.

    Add stuffed shells and pour rest of sauce over shells.

    Sprinkle Mozzarella on top.

    Bake covered 30 to 45 minutes at 350°.

    Uncover and bake 10 more minutes.
