Flounder Roll-Ups

Ingredients
- 1 bunch fresh broccoli
- 1 lb. fresh flounder fillets
- 1 can cream of celery soup, undiluted
- Swiss cheese slices
- 1/2 c. mayonnaise
- juice of 1 fresh lemon
- fresh mushrooms (optional)
Directions

1Cut broccoli into 4-inch stalks.

2Steam 10 minutes or until tender.

3Roll each fillet with a slice of Swiss cheese around a few stalks cooked broccoli.

4Secure with toothpicks.

5Allow heads of broccoli to extend past one side of flounder roll.

6Place roll-ups in covered baking dish in oven for 20 minutes or until flounder is slightly steaming.

7Mix soup, mayonnaise and lemon juice.

8Pour over flounder and top with sliced mushrooms (optional).

9Bake an additional 15 minutes.

10Total time 35 minutes in a 350° oven. Serve with lemon wedges.

11Garnish with parsley and sprinkle with paprika.
