- 1 tsp. extra-virgin olive oil
- 1 c. quinoa
- 1 1/2 tbsp. fresh lemon juice
- 113 c. reduced-sodium chicken broth
- 1/4 tsp. salt
- 1/2 c. Chopped flat-leaf parsley
- 1 1/2 tbsp. fresh lemon juice
Directions

1In a medium saucepan, heat oil over medium heat.

2Add quinoa and cook until lightly toasted, 3 to 4 minutes.

3Stir in chicken broth and salt.

4Bring to a boil; reduce heat to low, cover, and cook 15 minutes, or until broth is absorbed and quinoa is tender.

5Remove from heat and fluff with a fork.

6Let cool slightly and stir in parsley and lemon juice.

7Adjust seasoning to taste.

8Serve warm or at room temperature.
